Cinnamon flowers




Cinnamon is one of the most versatile spice, you can use it in a sweet, salty or savory dish, no matter your choice, it will bring notes of cold touch, orange flavors and a little bit of the joy of Christmas.


For 6 sticky flowers I used:


For the dough:

- 6 g dry yeast

- 4 teaspoons date syrup

-a pinch of salt

- 1.2 cup hot milk

- 1.2 cup of chickpea flour

- 1.2 cup of coconut flour

- 1 cup and a half of whole wheat flour

- 2 tablespoons melted butter

- 1 tablespoon vanilla extract

Mix the yeast with syrup and milk for 10 minutes, in order to activate yeast, next add the flour (all 3 of them), if needed add more whole wheat flour, knead the composition until it is mixed into a dough.

Cover it with a towel and let all the ingredients get to know each other for 1 hour.


For the Filling:

- 2 tablespoons butter

- 1 spoon cinnamon

- 3 tablespoons date syrup

- 1 tablespoon vanilla essence


For the Icing:

- 1 tablespoon butter

- 1 tablespoon cinnamon

- 3 tablespoons date syrup

- 1 tablespoon vanilla extract

- 3 tablespoons cream for cooking


Heat in a pan all the ingredients until the composition is homogenized.

Stretched the dough into a rectangular shape, spread the filling all over the surface and make a beautiful bun.

Cut 6 relatively even pieces and place in the muffin’s cups.


It will take another 30 minutes for them to rest.



Next step, they will go in the oven at 250 degrees for 20 min, until they are all rounded and tanned, some icing et voila!
